Step 1: Marinate the Mutton:
In a large bowl mix the mutton pieces with curd, half the ginger-garlic paste, half the turmeric powder, and a little salt.
Mix well with your hands, cover, and let it marinate for at least 30 minutes or preferably a few hours.
By doing this, the rawness goes away.
Step 2: Roast the spices:
Heat vegetable or mustard oil in a heavy bottom vessel or pressure cooker on high flame for two minutes, then reduce the flame.
Mustard oil makes the dish attractive and aromatic.
Add cinnamon, dried bay leaves, fresh cardamom, cloves, and black pepper to it and fry on medium heat.
After two minutes, add chopped onion and half ginger-garlic paste and fry till the onion turns golden.
Add the remaining ginger-garlic paste and fry for another minute till the raw smell disappears.
Step 3: Cook mutton with spices:
Add the marinated mutton to it and stir the mixture for two minutes till the spices get absorbed into the mutton.
Cover the mutton with a lid and heat it on medium heat till all the moisture evaporates from the mutton.
This helps to integrate the flavors and juices.
Step 4: Add more spices:
Then add red chili powder, cumin powder, coriander powder, and turmeric powder to it.
Cook for 5 minutes stirring continuously to prevent the spices from sticking to the bottom of the vessel.
Then add chopped tomatoes, green chilies, and salt as per taste.
Cook till the tomatoes become soft and the oil starts separating from the spices.
If you are using a pressure cooker, add about 1 cup of water and close the lid.
Pressure cook the mutton for about 10 -15 minutes or till it becomes soft.
If using a regular vessel, add enough water to cover the mutton and cover and cook on low heat till the mutton is tender, adding more water as required.
Once the mutton is cooked, check the seasoning and adjust salt and spices if required.
Add garam masala and mix.
Allow the curry to simmer for another 5 minutes so that the flavors meld.
A good smell will start coming from the mutton.
Step 5: Serve Mutton Curry:
