Step 1: Marinating the Chicken
Mix curd, ginger-garlic paste, red chili powder, turmeric powder, and salt in a bowl.
Add the chicken cubes to the marinade and coat it well.
Let it marinate for 30-40 minutes.
Step 2: Preparing the Gravy
Heat ghee in a pan and add one teaspoon of cumin seeds.
Add finely chopped onion to it and cook till it turns golden brown.
Add tomato puree and cook till the oil separates from the mixture.
Now add soaked cashews and cook for 2-3 minutes.
Let the mixture cool slightly, then blend it to make a smooth paste.
Pour the paste back into the pan and add garam masala, coriander powder, fenugreek leaves, and salt. Cook for a few minutes.
Add fresh cream and cook on low flame for 2-3 minutes.
Step 3: Cooking the Chicken
Add the marinated chicken to the gravy and mix well.
Cook on low flame until the chicken is soft and thoroughly cooked.
Adjust consistency with water if necessary.
Step 4: Serving
Transfer the Chicken Lababdar to a serving dish.
Garnish with chopped fresh coriander and some fresh cream.
