Ingredients
  

  • For marinade:
  • 500 grams of boneless chicken
  • 1 cup curd
  • 1 tbsp ginger-garlic paste
  • 1 tsp red chili powder
  • 1 tsp turmeric powder
  • Salt to taste
  • For gravy:
  • 2 tbsp ghee clarified butter
  • 1 large onion finely chopped
  • 2 tomatoes pureed
  • 1/2 cup cashews soaked
  • 1/2 cup fresh cream
  • 1 tsp garam masala
  • 1 tsp cumin
  • 1 teaspoon coriander powder
  • 1/2 tsp kasturi methi
  • Salt to taste
  • For garnish:
  • fresh coriander chopped
  • fresh cream

Instructions
 

  • Step 1: Marinating the Chicken
  • Mix curd, ginger-garlic paste, red chili powder, turmeric powder, and salt in a bowl.
  • Add the chicken cubes to the marinade and coat it well.
  • Let it marinate for 30-40 minutes.
  • Step 2: Preparing the Gravy

  • Heat ghee in a pan and add one teaspoon of cumin seeds.
  • Add finely chopped onion to it and cook till it turns golden brown.
  • Add tomato puree and cook till the oil separates from the mixture.
  • Now add soaked cashews and cook for 2-3 minutes.
  • Let the mixture cool slightly, then blend it to make a smooth paste.
  • Pour the paste back into the pan and add garam masala, coriander powder, fenugreek leaves, and salt. Cook for a few minutes.
  • Add fresh cream and cook on low flame for 2-3 minutes.
  • Step 3: Cooking the Chicken

  • Add the marinated chicken to the gravy and mix well.
  • Cook on low flame until the chicken is soft and thoroughly cooked.
  • Adjust consistency with water if necessary.
  • Step 4: Serving
  • Transfer the Chicken Lababdar to a serving dish.
  • Garnish with chopped fresh coriander and some fresh cream.
